There’s nothing like a day at the races! The thrill of placing a flutter on a horse, the parade of lavish hats, and mingling with royalty! Inspired by a trip to Ascot, I wanted to create an elegant tea brimming with lush aromas and delicate fruit flavors—something that evoked a lush English summer. Because I love bright, lively summer's fruit flavors, I chose to infuse a decaffeinated Ceylon tea with apricot and passionfruit and sprinkled in the goodness of a citrus-infused green tea. The combination is a winner, indeed! Naturally low in caffeine, Ascot is lovely sipped from a dainty cup, or served over ice with a splash of Pimm’s or better yet Limoncello!

Brewing Guide

Pre-heat your tea vessel. Measure a scant 1⁄2 tsp. of tea into a filter.
Pour 6 oz. of freshly boiled water over tea and brew lightly for 2-3 minutes.
Strain, pour and enjoy! Be sure to compost spent tea leaves. {Given measurements are per serving.}

Serving Suggestions

If you prefer a sweet touch, this tea is best sweetened hot with Tupelo honey, or a sprinkling of apricot-infused Stevia to enhance the fruit tones.  Serve it hot with a few drops of milk, or as a refreshing iced tea over ice garnished with a fresh lemon slice. Try is as a “This-style” iced tea and sweeten then serve over ice adding half and half. Or for true British summer treat try making a Pimm’s cup!

Prepare Ascot, measuring tea 4 TBS tea into filter, steep 5 mins. in 1 liter just boiled water, adding 1/3 cup sugar to the bottom. Strain, stir and chill.  

To prepare cocktail:

Layer a tall glass with ice, sliced strawberries, oranges and cucumber. 

Pour in 1 shot of Pimm’s No. 1 

fill with chilled Ascot tea 

Add freshly squeezed orange juice or a spritzer of orange soda and garnish with more orange slices and a sprig of mint.

Substitute: White rum for the Pimms.


Food Pairing

Ascot makes an elegant escape any time, but it’s especially delightful sipped in the garden with afternoon tea. For an English-inspired picnic, pack a hamper with a blanket, pretty cups, a flask of hot tea, and scrumptious treats like traditional finger sandwiches, fresh strawberries, and cream scones served with tart lemon curd or a lemon infused Dundee cake to marry with the citrus flavors of the tea. Lovely!
